Tuesday 10th March (Champion Day):

Starters

Monmouthshire air-dried ham, sweet pea panna cotta, shaved parmesan, sage oil croutons

Smoked mozzarella and pea panna cotta, sun-blushed tomatoes, micro cress salad and green herb oil (v)

 Mains

Duo of Lamb rump and shoulder of lamb with buttermilk potato, braised red cabbage, charred onion and tomatoes

Risotto of Jerusalem artichokes, sundried tomatoes, cotswold organic brie, truffle pesto (v)

 Dessert

Chocolate and violet mille-feuille

Wednesday 11th March (Ladies Day):

Starters

Severn and Wye oak smoked salmon, brown crab mayonnaise and pickled cucumber

Pressed Mediterranean vegetables, karashi mustard cream with micro herbs (v)

Mains

Norfolk chicken and Dorset wild boar supreme, black garlic purée, silky dauphinoise, mushrooms and asparagus

Fresh gnocchi filled with mozzarella and tomato, sun-blushed cherry tomatoes, pea tendrils and a creamy white wine reduction (v)

Dessert

Strawberries and cream crème brûlée, champagne pearls, macerated strawberries and chocolate tuile

Thursday 12th March (St Patrick’s Day):

Chicken terrine, woodland mushrooms, pomegranate, English mustard dressing

Purple carrot, heritage beetroot and tomato tart, with a Sparkenhoe cheese crust, seasonal leaf salad and white onion cream (v)

Mains

Feather blade of Hereford cross beef, cheek bon bon, cauliflower cream, colcannon mash, seasonal vegetables and whiskey beef jus

Halloumi wellington with fennel, apple and white bean sausage, sautéed spinach, dauphinoise cream and red pepper essence (v)

Dessert

Rhubarb and Madagascan vanilla cheesecake
